I love coconut and margaritas, so I came up with this cocktail last Christmas. The lime and coconut go so well together! I’m really happy with the way they turned out. I have the ingredients on hand during the holidays to make several batches. —Donna Gribbins, Shelbyville, Kentucky

Ingredients
- 6 lime wedges
- Coarse sugar, optional
- 1 can (13.66 ounces) coconut milk
- 1-1/2 cups blanco tequila
- 1 cup triple sec
- 1/4 cup simple syrup
- 1/2 cup fresh lime juice
- 1/4 cup cream of coconut
- 5 to 6 cups ice cubes
- Fresh cranberries
Directions
- If desired, moisten rims of 6 margarita or cocktail glasses with lime wedges and sprinkle sugar on a plate; dip rims in sugar.
- In a blender, combine coconut milk, tequila, triple sec, simple syrup, lime juice, cream of coconut and enough ice to reach desired consistency; cover and process until blended. Pour into prepared glasses. Garnish with lime wedges and cranberries. Serve immediately.
