  • Bacon: Cook the bacon according to the package directions and to your desired crispiness. These will be used as antlers, so leave them whole.
  • All-purpose flour: Use unbleached flour, a mix of whole wheat or your favorite 1:1 gluten-free flour blend.
  • Sugar: You’ll use 3 tablespoons sugar for this recipe. Try coconut sugar if you want a hint of caramel-like flavor.
  • Baking powder and baking soda: Use both baking powder and baking soda in this recipe for nice fluffy reindeer pancakes.
  • Salt: Although you’ll use a scant 1/4 teaspoon, salt helps balance the sweetness.
  • Eggs: Bring the eggs to room temperature prior to adding them to the batter.
  • Buttermilk: You can use 2% milk if you’d prefer, but buttermilk adds classic flavor.
  • Butter: Set some additional butter to the side for cooking the pancakes on the skillet.
  • Vanilla extract: Vanilla is rich and flavorful, and it adds depth to the sweetness of these fun pancakes.
  • Whipped topping in a can: The whipped topping is used as the bottom layer for the eyes and the noses, so you need only a little bit. Try this tasty whipped cream recipe for a homemade version.
  • Blueberries: Keep the berries whole and uncooked; blueberries are used for the eyes of the reindeer.
  • Strawberries: Remove the tops of the strawberries but keep them whole, as you’ll be using the red berries for the pancake reindeer noses.
  • Maple syrup: If you don’t have pure maple syrup, try our homemade apple brown sugar syrup.

Directions
Step 1: Cook the bacon

In a large skillet, cook the bacon according to the package directions, keeping the bacon in whole strips. While the bacon is cooking, prepare the strawberries by removing the tops, but keep the berries themselves whole. Rinse the berries and set them aside to dry. Let the cooked bacon drain on a paper towel-lined plate to absorb excess bacon grease.
