Ingredients
- 2 eggs, large and beaten
- 1/3 cup 2% milk
- 1-1/2 cups cheddar cheese, shredded
- 1 sleeve of Ritz crackers, crushed (30 crackers)
- 1/2 cup onion, finely chopped
- 1/2 cup green pepper, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
- 2 pounds ground beef
- 1/2 cup ketchup
- 3 tablespoons brown sugar
- 2 teaspoons Dijon or yellow mustard
Directions
- Preheat the oven to 350°. In a large bowl, mix together eggs, milk, cheese, crackers, onion, green pepper, salt, garlic powder, and pepper. Add ground beef and mix gently yet thoroughly. Shape into a 5-in. x 10-in. loaf in an ungreased 13×9-in. baking dish. Bake, uncovered, for 50 minutes.
- Meanwhile, in a small bowl, combine ketchup, brown sugar, and mustard. Pour over the meatloaf.
- Bake until a thermometer reads 160°, an additional 10-15 minutes. Allow to rest for 10 minutes before slicing.
