Irresistible Beef Schnitzel with Holstein Twist and Savory Braised Green Beans

Beef Schnitzel à la ⁣Holstein & ⁣Braised Green Beans

Ingredients

  • 6 tablespoons of butter

    mostbet
  • 2 large ⁤shallots, diced

  • Salt and pepper to taste

  • 1⁢ pound of green beans, trimmed

  • 1 cup of​ chicken stock

  • 4⁣ slices of beef top round (totaling ‌1 ‍1/4 pounds),⁣ flattened to 1/4 inch thickness

  • 1 cup of flour

  • 1 teaspoon of‌ ground sage

  • 7⁣ large organic ‍eggs

  • 2 ​tablespoons of Dijon mustard

  • 1 ½ cups of fine dry breadcrumbs

  • Approximately‌ 1/4 teaspoon of‌ freshly grated nutmeg

  • 1/4 cup ​of canola or other neutral-flavored oil

  • 1 lemon, halved

  • 4 rounded ​tablespoons ⁤of drained capers

  • 8 drained ⁣anchovy fillets

Directions

  • Step 1

    Begin by preheating the oven to 200°. In a large skillet with a lid,⁢ melt 3 tablespoons of​ butter over medium heat. Add the diced⁢ shallots and⁣ cook‍ until softened, ‌about 3 to 4 minutes, ⁣seasoning​ with salt and pepper. Add the ⁤green beans, coat‌ with the shallots, then pour ⁤in⁣ the chicken‌ stock. Cover and⁤ cook until‌ the beans‌ are tender, about 12 to 15 minutes.

  • Step 2

    Season the ⁤beef and prepare the breading station: Place the flour and sage in a shallow ‌dish,‌ seasoning them. In another dish, beat 3 eggs ‌and the Dijon mustard. In a third dish, season ⁢the ⁣breadcrumbs​ with salt, pepper, and nutmeg. ⁣Coat the ‍beef in the flour ⁣mixture, ⁢then the egg mixture, and finally the​ breadcrumb ‍mixture,​ pressing to ensure it sticks.

  • Step 3

    In ​a large skillet, heat 2 tablespoons of oil ⁣and 1 tablespoon of butter over medium-high⁢ heat. Cook 2 cutlets ⁣at a time ⁢until they are browned and crispy, about 4 minutes⁤ per side. Transfer the ​cooked cutlets to‍ the oven to keep warm. Repeat with ⁣the remaining cutlets. In the same skillet, melt the remaining butter over medium-low⁤ heat.‍ Crack the remaining eggs into the skillet and cook until the whites are set, approximately 3 minutes. ‍Flip the eggs ​and cook until they are over easy, around 1 ⁤more minute.

  • Step 4

    To serve, distribute the cutlets onto plates. Squeeze the lemon halves​ over⁣ the cutlets. Top each cutlet with‌ capers,​ an over-easy egg, and⁢ crossed anchovy fillets to form​ an X. Serve the green beans alongside the cutlets.
