One of my favorite treats at the county fair is fried Oreos. With this quick and easy air-fryer version, I can enjoy this summer delight all year round! The batter is infused with lemon zest and lemon yogurt for a burst of flavor, and a sprinkle of powdered sugar adds a beautiful touch. – Jennifer Gilbert, Brighton, Michigan

Ingredients
- 2 cups complete buttermilk pancake mix
- 5 tablespoons sugar
- 2 tablespoons grated lemon zest
- 3/4 cup (6 ounces) lemon yogurt
- 1/2 cup 2% milk
- 1 large egg
- 2 teaspoons clear vanilla extract
- 27 lemon creme Oreo cookies
- Confectioners’ sugar, optional
Directions
- Preheat the air fryer to 350°F. In a large bowl, mix pancake mix, sugar, and lemon zest. In a separate bowl, combine yogurt, milk, egg, and vanilla extract. Pour the wet ingredients into the dry mixture and whisk until smooth.
- Line the air-fryer basket with parchment paper. Dip Oreos in the batter, removing excess. Place coated Oreos in a single layer on the parchment, spaced 2 inches apart.
- Cook until golden brown, about 6-8 minutes. Repeat with the remaining Oreos. Dust with confectioners’ sugar before serving warm.
